BAKE SHOP

Bake Shop was a project I helped create and open with owner Krista Nelson from 2020 to 2023. I was hired on as the opening head chef, and alongside Krista, created all of our house-made recipes for sourdough, pastry, and savory items. While I was running the kitchen, one of our main goals was to reduce waste, using as many items in as many ways as possible. We also had a plastic-wrap free kitchen! I made most of the products from scratch, including yogurt, granola, pastry, bread, mayo, etc. This was one of the biggest challenges of my professional career. I learned about management, opening and running a restaurant, working with local purveyors and the daily task of improvisation.
